A hearty, healthy, one-pot vegan lentil stew made in the Instant Pot. High in protein and flavor—ready in under 30 minutes.

Ingredients

1 cup green or brown lentils, rinsed and drained

1 tbsp olive oil (optional)

1 medium onion, diced

2 carrots, chopped

2 celery stalks, chopped

3 cloves garlic, minced

1 tsp dried thyme

1 tsp smoked paprika

1 tsp salt (adjust to taste)

1 can (14 oz) crushed tomatoes

4 cups vegetable broth

2 cups kale or spinach (added after cooking)

Instructions

1. Select “Sauté” mode on the Instant Pot. Add olive oil, onion, carrots, and celery. Cook for 3–5 minutes.

2. Add garlic, thyme, and paprika. Stir well.

3. Cancel “Sauté” mode. Add lentils, crushed tomatoes, vegetable broth, and salt. Stir to combine.

4. Secure the lid. Cook on High Pressure for 10 minutes.

5. Let pressure release naturally for 10 minutes, then quick release.

6. Stir in kale or spinach. Let sit 2–3 minutes to wilt.

7. Serve warm. Store leftovers in fridge or freeze for later.

Notes

For oil-free version, skip sauté and use splash of broth.

Add curry powder or coconut milk for variation.

Can be doubled—just stay below the max fill line.

Freezes beautifully in individual portions.
